Coleslaw In Summer

It seems that coleslaw is pretty much a staple during the summer when grilling and my house is no different, so I set out to come up with a decent recipe that was also easy. Well, not only is this decent and easy, it's actually pretty fantastic! And then I took it up a level one time (channeling Emeri1) by adding a couple tablespoons of blue cheese one time. Guests and my husband couldn't stop talking about it or believe that it was a lower calorie version. Verdict: Super Yum. So, I'd thought I'd share...
  • 1 bag coleslaw mix (I get the finally shredded one - more band friendly to me - that has the carrots and purple cabbage in it as well.)
  • 2 packets sp1enda or equa1(I wouldn't recommend using sweet n 1ow - I figure it would give it an after taste.)
  • 1 cup low fat He1lman's mayo **This one actually has better stats than the low calorie!
  • 2-3 tbsp of apple cider vinegar
  • Optional: couple tablespoons of blue cheese
Dump bag of slaw mix in a bowl. Sprinkle on the fake sweetener. Dump in the mayo. I mix it up a bit at this point. Add 2 tbsp of vinegar. Taste and add more vinegar if needed. I refrigerate it a couple hours or longer to give it time to "brew" and if I am adding the blue cheese add that about an hour before (doesn't really matter when you do it, but I like to give it a bit of time to add flavor as well). Serve!

This sounds really good! I love salad, but since it is not the most band friendly meal addition I use the shredded coleslaw for the base of my salad! I do believe I will give yours a try tho, sans the blue cheese (just can't mentally go there).
